Ingredients:
For the fish:
4 salmon fillets
1/3 cup of grated Parmesan cheese
Juice of 1/2 lemon
1/4 tsp of garlic powder
1/2 tsp of thyme
Garlic salt and pepper to taste
2 tbs of extra virgin olive oil
For the cheesy rice:
4 yellow containers (about 2 cups) of brown rice
1 cup of grated Parmesan or mixed cheese
4 salmon fillets
1/3 cup of grated Parmesan cheese
Juice of 1/2 lemon
1/4 tsp of garlic powder
1/2 tsp of thyme
Garlic salt and pepper to taste
2 tbs of extra virgin olive oil
For the cheesy rice:
4 yellow containers (about 2 cups) of brown rice
1 cup of grated Parmesan or mixed cheese
Instructions:
Preheat the oven to 425 F
Mix the lemon juice, oil and spices and evenly coat the salmon, press one side of the fish in the Parmesan. If you are using fish with skin, press the fish side down and not the skin side. Please the fish (skin side down if you are using fish with skin) in a baking dish (I put aluminum foil in the bottom), sprinkle any leftover cheese on top and place the pan in the oven.
Turn the oven on broil and broil the fish for about 10-15 minutes or until the fish flakes.
Cook the rice according to the directions on the box.
Add the cheese and serve with the fish!
