You can substitute the ground turkey and/or veggies for anything you like, e.g. shrimp, corn, water chestnuts, tofu, etc.

Ingredients:
2 cups of brown rice - boiled according to the instructions on the box
1/2 cup of frozen peas
1/2 cup of thinly sliced carrots
1/2 chopped onion
3-4 garlic cloves
2 eggs and 1 1/2 cup of egg whites - scrambled
1/2 lbs of lean ground turkey (fried in a pan until it starts to brown)
2 tbsp of extra virgin olive oil
3 tbsp of soy sauce (I prefer low-sodium)
1 cup of low-sodium or no salt added chicken stock
1/2 cup of frozen peas
1/2 cup of thinly sliced carrots
1/2 chopped onion

Instructions:
Saute the garlic and onion in the EVOO until the onions are transparent. Then add the frozen peas and the carrots. Cook them for about 3-4 min or until the peas are cooked through. Then add the scrambled eggs, the broccoli, the ground turkey, the low-sodium soy sauce and the chicken stock. Cook everything on medium to high heat for 5-7 min. Add the brown rice. Done!
