Cheesy Turkey Carrot Meatballs

(If you are doing the 21-Day Fix: 5 mini meatballs are 1 red, 1/2 green, 1 blue 1 tsp per serving or 4-5 meatballs)

Ingredients:

1.25 lbs of ground turkey (4 red containers)
3 cloves of garlic
2 cups of shredded fresh carrots
2 tsp of dijon mustard

1 egg
Seasoning (I used Mrs Dash Salt-free Onion & Herb and Mrs Dash Salt-free Garlic & Herb, a sprinkle of pink Himalayan sea salt)
1/2 onion
1 1/3 cup of shredded Parmesan cheese
Olive oil to fry the meatballs

Instructions:

Mix all ingredients except for the oil. Make 20 mini meatballs (I made patties so they would be done faster). Then fry 5-6 at a time in 1 tsp of olive oil. You can also bake them in the oven, but it takes longer.

Turkey Burger With Homemade (Healthier) Mayonnaise

(For those of you doing 21-Day Fix: Per burger: 1 red, 1 yellow; since i only used a little bit of mayo, I counted it as 1 tsp)

Ingredients:
1/2 whole wheat Greek pita flatbread (I bought mine at WinCo)

1.25 pounds of lean ground turkey
1 egg
2 tsp Dijon mustard

1 tsp Mrs Dash Salt-free Garlic & Herb seasoning
1 tsp Mrs Dash Salt-free Onion & Herb seasoning
1 tsp of garlic salt
2 tbsp of brown rice flour (or quinoa flour or whatever flour you want to use) - plus a little bit to coat the turkey burger patties before frying or baking them


Instructions:
In a bowl, mix the ground turkey with the egg, the seasoning and the flour until well blended. Form burger patties. I was able to make 5 patties (5 red containers). Pour a little bit of brown rice flour in a bowl or on a plate and slightly coat the patties with some flour. 
You can fry the patties in a frying pan with a sprinkle of olive oil until done. You can also bake the patties in a non-stick pan at 350F for 30 min and broil them for 5 or grill them on a George Foreman grill.

Heat 1 piece of flatbread in the microwave for 30 seconds, cut into four equal slices. Finish burgers to your liking. I added some of my homemade mayonnaise (recipe in the Dressings, Dip and Sauces category).

You can eat it with your choice of veggies (e.g. lettuce, tomato, onions, etc.).  My husband loved these patties. He ate 2 of them :-) My kids didn't leave one piece on their plates.
